I took your advise to heart and today decided to give it a try, except with a Emile Henry bread cloche. Since I am experimenting, I decided to just heat just the cover in the over prior - 30 minutes at 430F, and cover the bread that is left raising at the base. The bread came out beautifully. I am going to keep experimenting, this time with different mixture of flour, and always with my natural yeast (that I have kept alive for over 5 years) - love my girls. :)
There is nothing better than a loaf of homemade sourdough bread, with French Onion soup, and a good glass of wine. Life cannot be better!! Thank you!
