Hi Joy! I would recommend between 1.5 and 2.5 teaspoons of yeast for this recipe. The more yeast you use the faster it will rise so as we get into the cooler months of the year, 2.5 teaspoons would probably be preferable. It sounds like you just need to let it raise for longer once it is shaped and in the pot. The amount of time it takes to rise is very much affected by temperature, so you will also see faster results in a warmer place (somewhere between 75-80 degrees if possible). Happy baking!
