I have been baking bread with Eikorn and or emmer, I am wondering how much yeast I should be adding to the bread to leaven it. I am using a total of 3 cups of flour, (21/2 c of King Author flour and 1/2 cup of ancient grains. My loaf is not raising very high and I am following the 3 ingredient no knead bread recipe/method on youtube. It calls for 2 tsp of Yeast (fast acting dry). I fold it every 1/2 hour as directed, then raise it again then bake. I place it in the cast iron pot then bake as directed after is snip the top of the loaf. Does it need to raise once more in the pot? or something. The flavor of the bread is great but im looking for lift as shown on the video. Thank you in advance. Joy
