Hi there. Ty for your input! I used KA bread and white whole wheat flour. Will keep that in mind about adding more bread flour…. I did weigh it however. Would have to see what my dark rye flour says. I’m not sure if it rose a lot during bulk rise. I was encouraged that i had a bubble on top after the first fold. Then it went away. Our house is on the cooler side so I left it in the oven with the light on most of the time. It was not able to be shaped. We loved it anyways! The flavor was soooo good. Not for sandwich bread though. Excellent with an egg or a light topping! Appreciate any advice!
