Ok I am making this for the first time and it seems hard to find pumpernickel. So I have dark rye flour. Does this difference impact much? I found it difficult to shape it at all. Even after the listed rise times and the folds. I know it says it is a high hydration dough but just not sure what causes it to not hold a shape?. Maybe I needed to knead it more in the beginning?.
