Hi Melissa. We are happy to hear your are enjoying this recipe. Buckwheat Flour contains little to no gluten so it would be best to use this in smaller substitutions. We would start by using 1/4 (30 g) to replace 1/2 of the Rye Flour from the recipe. Happy Baking!
