Just baked my loaves this morning, and this is by far the best wheat sandwich bread I have ever made. I have been experimenting with my sourdough for a little over a year. But mostly with white flour. I have never had great success with whole wheat breads with yeast, and figured a naturally leavened bread would be even more challenging. Not in this case! My loaves got a bit dark on the top, so I will try moving my oven rack down and tenting earlier next time. Both loaves rose beautifully!
