We're sorry to hear that this bread wasn't quite what you were hoping for, Paul! Most often when a bread has a very thick crust it's because there wasn't enough steam at the beginning of the baking process, steam is what makes for a nice thin crust. As Maurizio noted, this bread really likes a lot of steam!
