It does sound like the dough was over-proofed at some point — in warmer, humid months dough can rise faster than may be expected, we'd recommend shortening up the room temperature rise after the stretch and folds and skipping the one hour rise at room temperature after shaping the loaves. This should help to prevent the dough from over-proofing while it rises overnight in the fridge. We hope this helps!
