Sahnte, we're so happy to hear you're excited about this recipe! Unfortunately, time is one of the critical ingredients in this recipe, and the flavor and texture would both suffer without using the full amount here. For a sourdough sandwich loaf that uses some whole wheat and can still be made in a day, we'd suggest trying out Clay's Multigrain Sourdough Sandwich Bread instead. Happy baking! Kat@KAF
