Unfortunately, ganache doesn't do well in the freezer, and generally you get an off texture after thawing. We don't recommend topping it before, but waiting until after it thaws. As for adding other flavors the sky is the limit! You most likely will want to use a combination of cream and whatever you are flavoring it with so that it's not too strong. And for texture yes, if it's too thin just add a bit more cream. If it's too thin you can also add a bit more chocolate, so don't be afraid to play it with the recipe as you go!
