More mocha!?! Yeah, we've been there. Here's a few things you can do, Cassie. For the one cup of brewed coffee, you can use a very dark roast espresso. That would add more flavor, without adding anything additional to the ingredients. As well, you can add a couple of teaspoons (to taste) of espresso powder to the ganache. Adding it there will give the cake a stronger mocha flavor, since it might get lost in the cake itself. And lastly, you could always brush or drizzle a coffee liqueur over the cake after it's out of the pan, but before it cools all the way, and then pour the ganache over it.
