A quibble: Northern-style cornbread is the one with sugar added. Southerners would shun that idea. Seems counter-intuitive, but true to traditional Southern cooking. Yankees think cornbread is cake. Wrong! You add garlic to cornbread batter for hush-puppies but don't put sugar in the batter. The puppies wouldn't hush if you did that. They'd have a sugar high and yowl.
