Hi there. I am trying to bake gluten free & vegan muffins which have sugar replaced by fruits (like date paste) and face issues like the tops of the muffins being dry/crusty though the interiors were moist still. What could possibly cause this? Is is the issue of the flour (dry ingredients) or the sugar levels? And how can i resolve it?
