I usually use coconut oil and it works really well in plain aluminum pans. It's solid at room temp so it spreads around the pans nicely. However, it did not work well with the NordicWare Train Cake Pan - I am trying the tips in this post to get the cakes to pop out neatly. I tried a cake pan paste (equal parts flour+oil+coconut oil) and it worked better, especially with a pound cake recipe instead of the fluffy cake given on NordicWare's website, but next time I'll try your sugar tip!
