I used cooking spray on a Wilton non-stick with mini-bundt last week, because the recipe called for that. It also said to let cakes cool in pan for 10 minutes which worried me. I think that's what did it, as I usually don't have sticking problems but turn cake over on rack after just a few minutes of cooling or none at all. I also rubbed spray oil into every nook 'n' cranny including the pole in the middle. I had a LOT of sticking and had to use a knife to get it out. I made these same mini-bundt cakes years ago for Christmas gifts and don't recall sticking. I just don't remember what I did, but I don't ever use cooking spray when I bake normally. Gonna test shortening next time minus the flour, as I seem to have better luck with that for cakes. But I am going to test one mini-bundt at a time to see what happens.
