I have found using homemade Pan Release, equal amounts of flour, oil, and shortening, is perfect. I have found the cake about falls out of the pan when you turn it over, after letting it cool 10-15 minutes. I got the recipe for it elsewhere. I wish the bakers at King Arthur would experiment with it and tell us what they think! My husband used something like it at the bakery where he worked as a teenager, he is 83 now.
