You know those little green stopper stick things that Starbucks puts in hole of the cup lid to keep the drink hot? I have a stash of them and I use them all the time for loosening muffins and cakes from pans. They're thin and plastic and have a rounded edge at the bottom of the stick part, plus they're flexible so perfect for that task. Just make sure you let your baked goods cool a little bit. I haven't had one melt on me yet, but I've never tried using one on something right-out-of-the-oven-hot.
