I think I must be the only person in the world who worries about scratching her nonstick cookware. (I cringe when cooking-show hosts put metal on nonstick anything.) Maybe my cookware is older and not as tough, but nothing is worse than trying to remove a cake from a pan that has scratches, which always cause the cake to stick. To keep the scratches from happening, I usually use a plastic item, either a plastic knife or spatula (I have one that came with a cake-decorating set).
