Hi Aly, breadcrumbs really help keep the strudel dough crisp by soaking up excess moisture from the baked filling. Common substitutes for breadcrumbs are corn flakes (crushed), crackers (crushed) or oats (buzzed in a food processor), although we haven't tried those with strudel dough. For best results we'd recommend breadcrumbs.
