Hi there, Therese! We're sorry to hear that your first go at this pastry didn't go as well as expected! It sounds like maybe too much vital wheat gluten was used. We'd recommend either using half the amount of vital wheat gluten you had previously or just trying it with all-purpose flour. We hope this helps and happy baking!
