Lisa, I'm not a professional baker or anything but I've been in your shoes. One thing I suggest is to trust King Arthur Flour! Their recipes are easy to follow, which makes it easier to bake. The main thing, though, is to use their products. They are a bit more expensive but ever since I switched to using KAF products, I never have to throw out a failed attempt!!! In the end it costs less (since I'm not wasting tons of ingredients). It truly does make a difference. Give it a try - I highly doubt you'll be sorry.
