Hi Michael, the usual conversion for lemon oil is an equivalent of lemon zest (since the oil actually comes from the zest). We say that 1/2 teaspoon lemon oil = approximately 1 tablespoon lemon rind. Extract is a bit different, but it sounds like you came up with a great substitution! Rule of thumb, I would go with about 1 teaspoon lemon extract for 1/2 teaspoon oil, but this could vary depending on how potent the extract is.
