Carol, the night before you'll just want to soak your fruit and feed your sourdough starter. The rest of the time is all one the same day, so you'll probably need all day, around 12-13 hours or so. It's definitely a challenging recipe, and one to try only when you know you can clear your schedule for it. (Luckily, there are some significant rise times, so you can probably get a lot of household projects done in the interim!) Hope that helps! Kat@KAF
