Thank you so much for this clarification! I have been baking sourdough breads regularly with your recipes for more than a year and had never realised that it was that flexible if I can use that word... how embarrassing!! I get really good results most of the time nevertheless! Cant wait to try that next time I bake to see if my levain will look stronger in the morning. It makes so much sense the way you explain it. I guess I was misunderstanding some of the basics. You should write a book! You have a very kind and patient way of explaining things. Will try the kugelhopf next week end... Thanks again!
