Tried to healthify Bravetart Triple Oatmeal cookies. Subbed KA white whole wheat flour for AP flour & KA alternative sugar for the white sugar. Turned out great!
Got over ambitious with the next batch & tried to cut back on the fat by subbing Greek yogurt for the butter 1:1. Dough too wet, so added more whole wheat flour to improve texture. Disaster! Very cakey & had a weird flavor.
Trying to understand the chemistry... as well as asking for suggestions on how to cut back on the fat...
