Hi, Damon! We've heard of this happening to some folks when their oven isn't pre-heated all the way. Given that most ovens are notorious liars about when they've actually come up to temperature, you might want to either check to make sure your oven's temp is correct with an external thermometer, or just give it an extra 15 minutes or so to finish the job after it gives you the signal that it's ready.
