Hi Gloria, I'm sorry I wasn't able to answer this question in a timelier fashion! For future reference, if you make a levain earlier in the day, it's fine to stick it in the refrigerator until you go to bed at night, and then pull it out and leave it at room temperature to ripen overnight. This method can actually come in handy if your house happens to be very warm and there's a risk that the levain will ripen and fall before you're able to bake with it the next day.
