You could try making a few rolls with about 200g of the dough, or use this to calculate a slightly reduced recipe: What you need (1200g) divided by what the recipe makes (1438g) = 1200/1438 = approximately .84. So, if you multiply the weight of each ingredient by .84, that should give you a reduced version of this recipe that should fit in your 13" pullman pan. This particular ratio won't work for every recipe, but you can use this formula (what you need/what the recipe makes) to determine a multiplication factor by which you can increase or decrease a recipe so that it will fit your pan.
