Hi Rosa, it really depends on the composition of the levain whether it will contribute more sour flavor or not. This recipe generally results in a fairly mild flavored bread, particularly if you add the recommended yeast. You can certainly substitute 10% of the flour with whole wheat flour if you prefer!
