Thanks for explaining, Barb! Also, wanted to say I halved this recipe and used dough setting on my bread machine yesterday. You're right, it rose quickly! Out of the oven came a perfectly soft, flavorful, sourdough sandwich bread which my family of 5 devoured in minutes. Used all purpose flour and was able to slice thinly after cooling completely. Everyone voted this as our daily bread. :-) the search is over!
