Hi Jill, you are correct that this particular overnight levain does not contain any diary products. I think the reason you can use buttermilk in the overnight starter for the Classic Sourdough Waffles or Pancakes recipe is that both buttermilk and sourdough discard are quite acidic, which will help ward off any bad bacteria that could make you sick. In addition, cooking the waffles or pancakes properly will eliminate bacteria.
