If you skip the bottom layer, you might want to consider increasing the second layer by about 1.5x so you still have enough pastry to support the topping. It's worth noting that without the base, the top layer may spread slightly, resulting in a larger, thinner pastry, so just be sure to check for doneness early as it won't take as long to bake all the way through.
