Gluten-free crust can be somewhat of a challenge to handle, Regina. One idea is to make a traditional bottom crust then use a gluten-free sugar cookie recipe to make thin cut-out shapes to arrange on the top. Or you could consider going for taste and topping off your pie with a struesel topping. Yum! Kye@KAF
