Heather, although alcohol does act as a preservative, so does sugar. Most of these recipes do offer you the choice to use simple syrup instead of alcohol, so I'm sure a blend of simple syrup and boiled cider will work, but you may want to shorten the aging process to a few weeks, rather than a full 7 weeks.
