Dawn, you might want to consider combining some of your frozen apples with some fresh apples to give the filling some extra moistness and texture in your pie filling. Frozen apples are great for making applesauce (or you can even freeze applesauce already made next season). You can try cooking the thawed apples gently and adding some apple juice to the mixture to help re-hydrate and bring them back to life. Other recipes that might be good options for frozen apples are Apple Cinnamon Scones, Apple Muffins, or Apple Cinnamon Bars.
