I, too, quit making pie crust totally by hand as I've aged. I use the stand mixer with the paddle to mix in the shortening and butter and then mix the water in by hand just until it starts holding together. I've tried using the food processor but I don't like the result as much as I do with the stand mixer, which seems to give me a little more control on when to stop mixing. And I just like the feel of mixing the water in by hand just until it's "shaggy." Great article on making pie crust!!!
