I believe you can keep the dough in the fridge for a few day. That is a few, not more than 3. Did about 5 at Christmas and the crust wasn't usable. Just let it sit on the counter for about 5 minutes before you use it. You can also freeze the dough for a few months. Just defrost in fridge overnight.
