I used my stand mixer this week to make pie dough for the first time. I have always been pretty proud of my crusts made using my food processor but I always found it a bit messy (flour somehow always flying a bit out of the processor while cutting in the butter) and the processor a bit difficult to clean when done. Decided to try my stand mixer and it is going to change my (pie making) life! It's a beautiful thing that flour does not fly out of the mixer and the mixer bowl and beater paddle are easy to clean. Best of all the pie crust was just as good if not better than what I have always made in my food processor. Flaky and tender, I could tell it was going to be that when rolling it out with all those beautiful butter patches. My husband cut up and served the pie and remarked that it was the easiest pie ever to get pieces out of the pie plate in tact. We will see if that continues with future pies but I am a convert to making pie crusts with my stand mixer. If it matters to anyone I will mention that I always use all butter for my pie crusts.
