Because of my arthritis, I haven't made pie crust homemade in years. I buy it in the refrigerated section. It's ok, but not great. I found your recipe, and decided to give it a go as I have a Kitchenaid. Cutting up ice cold butter isn't possible with my arthritis, BUT, I left the butter out for a couple hours, cut it into pieces as shown but it was much softer when I did. Put pieces of butter on a plate and put the plate of cut up butter into the freezer for an hour. VOILA. Ice cold butter! This recipe made my pie delicious! a flaky buttery crust that was perfect! I didn't even have to cover the edges it cooked so perfectly. I made HALF the recipe for one pumpkin pie. I give this a THUMBS UP.
