Good question, Sharon! Both our Gluten-Free Measure for Measure Flour and our Paleo Baking Flour are 1:1 substitutes for regular all-purpose flour in non-yeasted recipes. Paleo Flour, along with being gluten-free, is also grain-free. It doesn't do well in recipes that don't use eggs as it depends on them for structure since it has none.
