If she's only avoiding wheat flour or grain-based flour, you might be able to try making a crust using our grain-free Paleo Baking Flour. As for the apple filling, we haven't experimented with using sugar substitutes in our test kitchen, but we do know some home bakers who have had success with this in their home kitchens. We'd suggest reaching out to your daughter-in-law to see if she has advice, as she's likely spoken with her physicians or dietitian about her specific needs and may be able to help clarify what kinds of recipes and serving sizes are appropriate for her. Unfortunately, while we have quite a bit of baking expertise, nutrition for someone's specific medical needs should come from someone with the correct training.
