I have a large, extra powerful stand mixer that handles multiple loaves of bread dough. I'm confident it can easily combine large batches of pie dough, more than twice the two crust recipe. I wonder if the correct cold butter-bits texture would be adversely affected if say, I try three times the amounts of the two crust recipe. Also, would pre-chilling the metal bowl and paddle be beneficial in the process?
