We like the way you think, Priscilla — more pies for everyone! While this is a "double crust" recipe, if you're using it to make two single crust pies, it leaves absolutely zero wiggle room for crimping, variations in thickness, or mistakes. (And we ALL make mistakes at times!) If you're making pie for an important occasion, you're better off doubling the recipe and ending up with a bit of extra dough. That way you can rest assured that you have all that you you need to make a truly beautiful pie that will make your heart sing. Enjoy! Kat@KAF
