I'm a baker's daughter and I learned many tricks of the trade working for my father when I was young. The first that I learned through the processes of trial and error is to never over stir the dough whether it is for pie crust or cookies.... and especially muffins. Eventually you will get a feel through experience and you will know when it is perfect!
