We're happy to clarify, Amelia. Start by adding enough water to moisten the dough and bring it together. When you can squeeze the dough and it stays together as one shaggy mass, that's your sign that you only need just a little bit more water, usually about 1 tablespoon. At this point, there should be some dry crumbs in the bottom of the bowl that fall away from the shaggy mass. Pour that last tablespoon or so over the dry crumbs and put the dough together. A few quick kneads on your work surface and the dough should look smooth and is ready to chill. We hope this helps! Kye@KAF
