Every bakery that I go into has lemon squares with pie crust on top and bottom. Why can we not find a recipe showing how to make these? A pastry chef told me it was difficult. He was going to tell me how to make them but was interrupted so I never got the answer. Are there any professional pastry bakers reading this that can explain how this is done?
