As the 'pie baker' in my family (thanks to my Aunt who was the 'pie baker supreme' from whom I learned) I'm always looking for tips to improve. I've always been a 'by hand with pastry blender' pie maker but will be trying out you tios soon. Guess I'll just have to make a few test pies before the holidays. My big question is what you've used to roll out the pie dough. Looks surprisingly like a Tupperware Pastry Sheet. If it's not can you share where you got it? Mine is finally getting to the point where I'll have to replace it. Don't g kniw why. I've only had it since 1970-ish. Oh! And S& H Green Stamps. Fond memories. I still have the kitchen steep stool I got using them. It has the fold out steps. Relegated to garage use now but still in use.
