For a few years I've been using KAF 100% Whole Wheat pastry flour and the recipe on the bag. I love it. I've baked pies for decades (farmwife). I bake breads, cookies, whatever with part or all Whole grain flours of some kind. I really, really like this whole wheat pastry flour crust I've been making. I'll try your method with the stand mixer. My poor old arthritic hands, shoulders deserve a break. I haven't read any comments about using this flour. I read and read!! I hope it works. Recently I've tried Christopher Kimball's Milk Street recipe using sour cream and butter. I like it, too. (I like pie!!)
