Here we are in pie season again. Another tip: I grate the butter into the flour mixture with a cheese grater. For multiple pies, I use the food processor to grate cups of butter in seconds. The shredded butter is perfectly 'flaked' and incorporates in with the flour easily, whether in a mixer or by hand. I do this for biscuits too, and they come out flaky and delicious.
